Eggplant Bharta


I love eggplant.  I'm not sure why, as it has little flavor of it's own.  Tonight I made Eggplant Bharta.  This dish has onions, spices from India, and peanuts.  I like it more than Pat does, so maybe I'll get to eat most of it.

For dinner tonight I ate eggplant Bharta with leftover brown rice and leftover curried lentils.  I added some yogurt and sliced cucumber because I was too lazy to chop the cucumber into the yogurt.  I'm out of fresh cilantro and mint anyway.  What am I saying?  I have 3 different varieties of mint growing in my backyard!  Guess I should have been out snipping fresh herbs instead of taking that dumb IQ test...
